Part of Indigo extraction process, after cutting down the indigo bushes, the leaves and stems are loaded into 1000 liter tanks of water. Then the tanks are filled with water and big rocks are placed on top to weigh down the leaves so that they are kept submerged under the water. The leaves are then left to ferment for up to 24 hours in hot climate. The Indigo expert keeps a close eye on them so that they know the perfect time to drain off the water to begin the next stage of extraction.
